{"id":27107,"date":"2023-10-27T12:34:37","date_gmt":"2023-10-27T12:34:37","guid":{"rendered":"https:\/\/evropskakuca.me\/?post_type=story&amp;p=27107"},"modified":"2023-10-27T12:34:37","modified_gmt":"2023-10-27T12:34:37","slug":"gorska-trpeza-kulturno-nasljede-oslikano-u-gastronomiji","status":"publish","type":"story","link":"https:\/\/www.evropskakuca.me\/me\/story\/gorska-trpeza-kulturno-nasljede-oslikano-u-gastronomiji\/","title":{"rendered":"Gorska trpeza: Kulturno naslje\u0111e oslikano u gastronomiji"},"content":{"rendered":"<p>Da li znate \u0161ta je kolobotonjica\u2026\u010de\u0161kek ili gunguljo\u0161?<\/p>\n<p>U pitanju su tradicionalna jela planinskih krajeva Crne Gore. \u010citaju\u0107i publikaciju \u201cGorska trpeza\u201d koju je pripremila <a href=\"http:\/\/www.bjelasica-komovi.me\/\">Regionalna razvojna agencija za Bjelasicu, Komove i Prokletije<\/a> , u okviru projekta koji je finansirala Evropska unija, nau\u010di\u0107ete da se kukuruz zove kolombo\u0107 i da je ova rije\u010d u na\u0161 jezik stigla iz novogr\u010dkog.<\/p>\n<blockquote><p><strong><a href=\"http:\/\/montegastro.me\/\">Gorska trpeza<\/a>\u00a0<\/strong>je objedinila recepte za pripremu jela tipi\u010dnih za planinske krajeve. U sakupljanju recepata i prilago\u0111avanju za publikaciju, pomoglo je vi\u0161e od 50 doma\u0107ica, kuvara i pastira.<\/p><\/blockquote>\n<p>&#8220;Htjeli smo da izdignemo tradicionalnu kuhinju kao zna\u010dajno kulturno naslje\u0111e na\u0161eg naroda koje je neophodno da bude vidljivo u seoskim doma\u0107instvima. To nam je bio pokreta\u010d da pi\u0161emo projekat&#8221;, kazala nam je <strong>Jelena Kriv\u010devi\u0107<\/strong> iz Regionalne razvojne agencije za Bjelasicu, Komove i Prokletije.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone size-large wp-image-26276\" src=\"https:\/\/evropskakuca.me\/wp-content\/uploads\/2023\/08\/FRO_0460-1024x683.jpg\" alt=\"\" width=\"1024\" height=\"683\" \/><\/p>\n<p>Kroz publikaciju, \u010ditaoci mogu da nau\u010de ili da se podsjete kako se pripremaju neka prepoznatljiva jela, poput ka\u010damaka, cicvare, popare, priganica, pati\u0161panja, sutlija\u0161a..<\/p>\n<p>&#8220;Izme\u0111u ostalog prikupili smo i recepte za jela koja se mo\u017eda vi\u0161e ni ne jedu ni u seoskim doma\u0107instvima. Nekako su zastarjela i mo\u017eda bi pala u zaborav. Prikupili smo te recepte, anga\u017eovali profesionalnog kuvara da nam pomogne da ih adaptiramo i standardizujemo. Onda smo prikupili pri\u010de o tim jelima ili namirnicama\u2019\u2019, istakla je Jelena.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-large wp-image-26202\" src=\"https:\/\/evropskakuca.me\/wp-content\/uploads\/2023\/08\/FRO_0351-1024x683.jpg\" alt=\"\" width=\"1024\" height=\"683\" \/><\/p>\n<blockquote><p>Publikacija \u010ditaoce upoznaje i sa neobi\u010dnim na\u010dinima pripreme poznatih jela. Tako mo\u017eete otkriti recept za boraniju sa kajmakom, ili za posnu sarmu sa orasima\u2026<\/p><\/blockquote>\n<p>\u2018\u2019Publikacija nam je toliko pomogla u stvari da oslobodimo ljude da sa ponosom pri\u010daju i o ka\u010damaku i o skrobu, koprivi.. o jednostavnim seoskim jelima\u2019\u2019, dodaje Jelena.<\/p>\n<blockquote><p>Zbirka recepata <strong>Gorska trpeza<\/strong> nastala je sa ciljem da se na jednom mjestu predstave tipi\u010dna jela planinskih krajeva Crne Gore.<\/p><\/blockquote>\n<p>Publikacija je nagra\u0111ena na konkursu francuske fondacije <a href=\"https:\/\/www.cookbookfair.com\/\">The Gourmand Awards<\/a>. Zbirka recepata sa sjevera Crne Gore osvojila je prvo mjesto u kategoriji \u201eGastro turizam\u201c, a drugo u kategoriji \u201eNajbolji me\u0111u najboljima na cijelom svijetu\u201c. Upravo to priznanje je donijelo novu vrijednost.<\/p>\n<p>\u2018\u2019To priznanje je zna\u010dilo svima i sva na\u0161a doma\u0107instva imaju tu publikaciju. Ona im olak\u0161ava posao jer je sve prevedeno na engleski\u2019\u2019, zaklju\u010duje Jelena.<\/p>\n<p>Kuhinja ovih prostora je odraz kulture, tradicije i istorije naroda koji ovdje \u017eive.
